So, my fiancé and I love French toast, but there are only two of us and we're lazy. Hence, the recipes in Heather's book and on the board are best for special guests and when we feel like really treating ourselves. For our Sunday morning breakfast, we use this recipe:
2/3 cup vanilla soy milk 4 egg whites optional - dash nutmeg and cinnamon 6-8 slices potato bread (the squishy stuff that lives next to Wonderbread in the store. Stroehman's is safe)
whisk together everything except bread (of course) and pour into a pie plate. Dip the bread into the egg/milk mixture (coat both sides) right before you drop it onto the lightly oiled pan. Fry until golden brown. Serve with the usual condiments.
The potato bread gives the toast that wonderful golden color of traditional French toast, and getting the squishy kind means it's lovely and tender in the center.
