1 sprays cooking spray
1 cup onion(s), red or yellow, sliced
2 pound boneless, skinless turkey breast(s), a whole roast or breast tenderloin
1/8 tsp table salt, or more to taste
1/8 tsp black pepper, freshly ground, or more to taste
1/2 cup hoisin sauce
Preheat oven to 400ºF. Coat a shallow roasting pan with cooking spray; arrange onion slices in bottom of prepared pan.
Season turkey all over with salt and pepper; place turkey on top of onion slices in pan. Using the back of a spoon, spread hoisin sauce all over turkey.
Bake until turkey is no longer pink in middle and an instant-read thermometer inserted in middle of turkey reads at least 165ºF, about 35 to 40 minutes. Let turkey stand 10 minutes before slicing crosswise into 1/2-inch-thick slices. Serve turkey slices with roasted onions on top. Yields about 3 ounces of turkey per serving.
This recipe adds easy moisture and flavor to turkey breast with sweet and tangy bottled hoisin sauce – a rich combination of soybeans, sugar, chilies, garlic and sesame (you can also use bottled black bean sauce instead of the hoisin sauce if you prefer). We roasted it over onions which soak up the sauce while getting golden brown and caramelized
I thought it was pretty good, however, my husband didn't care for it! I'm guessing because he didn't have stuffing with it. Stuffing is my absolute favorite! I served it with stuffing, mashed potatoes & carrots & peas. The Onions were not quit done enough for me so I would suggest sauting them or cooking them before they go under the Turkey if you don't like them crispy. This reciope comes from Weigt Watchers.com
