"Cream Cheese" Chicken Encheiladas

2 cups chopped cooked chicken or turkey
1 cup chopped mushrooms
1 package tofutti better than cream cheese
1 jar 8oz salsa
8 (6-in) flour tortillas
grated soy/rice cheese

1.Stir chicken, mushrooms, cream cheese and ½ cup salsa in saucepan on low heat until cream cheese is melted.

2.Spoon ½ cup chicken mixture down center of each tortilla; roll up. Place seam side down, in lightly greased 12x8-inch baking dish

3.Sprinkle grated cheese down the center of the tortillas. Cover with Foil.

4. Bake at 350 for 20 min or until thoroughly heated. Pour remaining salsa over cheese.

NOTES:The recipe actually called for bell peppers instead of mushrooms, but I know that I can't handle them so I used the mushrooms instead.

The recipe might be a little high in fat, if you're sensitive to that. Be sure to eat with lots of SF (like rice).
