if it calls for liquid milk- use rice/soy, will be fine.. or if you have made mashed taters recently use the liquid you boiled the potatoes in... if it calls for powdered milk substitute an equal amount baked potato... or potato buds/flakes

basically milk is in recipes to add mouth feel and softness to the breads and also to lengthen the time before it gets stale. Potato will do this, as will rice and soy milk, they each add their own flavor in small amounts- I mostly wind up using potato because it has the least flavor change to teh breads... I make hamburger and hot dog buns that way
