Shortcake: 2 1/3 C Reduced Fat Bisquick Mix 3 Tbs Light Smart Balance 3 Tbs Sugar 1/2 C Plain Soy Milk Place in ungreased 8 X 8 Pan Bake @ 425 degrees 15-20 MIN Cut into 6 Pieces
Strawberry Glaze: 1 pkg Strawberry jello Add 1 C boiling water; stir until dissolved Add 3/4 C cold water; stir Cool until syrupy Add 2 C Sliced Fresh Strawberries (sweetened)
Topping: I found a Whipped topping that is Dairy Free, to the best of my knowledge, it's called "Nelson Whipped Topping". I don't know if you could find it online, or not, I found it at a little bread store. It really didn't whip to well but was good anyway. I mixed it with 1/2 C of Vanilla Soy Milk but did not add the Vanilla as directed. Add Glaze & topping as you eat it not all at once. I think it might get soggy if you do it that way.
The Shortcake has 5.41 Fat per peice The Whipped Topping has 1.75 Fat per whole bowl I don't know if you could reduce the Smart balance to 2 Tbs, or not, it might get too dry. As for the Glaze I was looking for a Glaze that was not so jello-y more of a smooth consistency. If anyone has any recipe like that let me know!
