I always hoped that when I asked for my "fresh" deli meat shaved that it had to be okay because it wasn't sitting in the case for god knows how long. I never thought about when the meat cutter was cleaned or the other things you mentioned! I guess I just don't like packaged meats because they have made me sick so many times before. I just assumed it was because they weren't as "fresh" or something.
