I think the concern with pre-packaged lunch meat for IBS is that it can come packaged with preservatives and flavor additives, so it's important to read the labels carefully.

You can cook your own turkey breast - it really is super simple - for a Sunday night dinner, then eat it for sandwiches all week. You can also bake a boneless, skinless chicken breast in aluminum foil at 375 for about 45 minutes - add a little white wine or chicken broth and some tarragon plus salt and pepper before wrapping it up. Let cool and slice for sandwiches.

As for what condiment to put on your sandwiches, I tolerate Hellmann's Reduced Fat Mayonnaise (green lid) with no trouble now, but if you're new to the diet, be cautious - I found any mayonnaise at all troublesome when I first started out. There are fat-free mayos and in one of her recipes , Heather suggests jazzing up FF mayo with a little olive oil and a squirt of fresh lemon juice to make it taste better.

There are several recipes in EFI that use chutney instead of mayo on sandwiches - here's an example of one. (Heather makes her own, but you can buy them - just check the ingredients carefully.) Chutney does tend to be spicy, so if that bothers you, you might consider some type of preserves instead - sounds weird, but lots of people eat turkey sandwiches with cranberry sauce.

Last, but not least, my husband likes turkey sandwiches with just a little mustard.

I can also eat canned chicken mixed with a little low fat mayo, a little finely chopped celery, and a little onion, as well as tuna - I buy the chunk albacore in water, mix with the same additives as the chicken and add in a little chopped sweet pickle. Again, this might be advanced IBS eating, depending on how sensitive you are to the mayo and IF when you first start out - I didn't try either of these until I'd been on the diet for a few months.
