Hi! I haven't been on the boards for awhile and I was just cruising for some new recipes and saw your post about deli meats. I have a food service background and have worked in various delis and kitchens over the years. Your comment on fresh sliced deli meats being better than packaged is a common misconception. The packaged deli meats are prepared and packaged under very strict government regulations with regard to cleanliness, sanitation and freshness. On the other hand, you don't know when someone last cleaned that slicer at the deli, or what they touched just before they started slicing your lunchmeat. You don't even know how OLD that lunchmeat is or how long it's been sitting in the cooler with the plastic wrap hanging off of it. Maybe the reason you are having problems with lunch meat is because of the way it's being handled before you even buy it. Like I said, I've worked in delis most of my life and I only buy prepackaged lunch meat. I know too many clerks who've never washed their hands and I've seen too many pieces of bad lunchmeat served to people when it should have been thrown away. Hope I didn't ruin anyone's day with this.
