Trish,

I have made this dip using Kidney Beans (I buy the Edgell brand).

As for the soy cheese us Aussies have really dipped out in that area. I find that in most recipes I just have to leave it out. Hopefully manufacturers over here will respond to the demand very soon! The two that I have found that I like so far are made by King Island.

They make a cream cheese and a cheddar (stocked by coles)but it's not the same as the soy cheeses available in the US -the main problem being they don't melt. I find it's better than nothing though.
