I am trying to come up with some good ideas for lunches I can pack for work. I have a small refrigerator where I work so I can keep things like drinks, bread and other perishables. My usual lunch consists of something like a sandwich, baked chips and a drink. Occasionaly I bring leftovers from home, like the shrimp fried rice recipe in the IBS diet book. There are a handful of places nearby I can go out to eat, but it definitely saves money to prepare a lunch. (Many of the local places serve fast food combos for lunch - not exactly great for my colon) I'm looking for ideas to expand on besides sandwiches - such as ways to use tunafish, rice, etc. for lunches that will taste just as good as if I went out to eat. I've also tried drinking Slim Fast but that sure makes for a short lunch and it doesn't feel the same. Thanks. I appreciate any suggestions. Maybe one of the recipes in the IBS book is one you enjoy using as leftovers for lunch.
