Thanks for the replies, guys. I was asking about homemade fries because as I mentioned in my post, I can't get any premade fries here that are OK for me to eat (at least not at the moment). The stores here carry either Ore-Ida or the store generic brand. The lowest I've found is 25% calories from fat, and I can't eat that on an empty stomach. Target does carry Alexia, but only the garlic kind, and they are super-expensive anyway. I can buy 10 lbs of potatoes for the price of 12 oz. Alexia fries. Yikes.

So anyway, here's what I did --

1. Peel, wash, slice up potatoes.
2. Spray a baking sheet with non-stick cooking spray (canola is best).
3. Lay out raw potatoes on baking sheet. Don't let them touch.
4. Spray the potatoes lightly with cooking spray. Sprinkle w/ spices if you like.
5. Stick the baking sheet in the freezer for a couple hours or until fries are frozen solid. Toss into large ziploc bag and put back into freezer.
6. When you want fries -- spray baking sheet with non-stick spray. Shake portion of fries onto baking sheet. Bake at 425 for 20-25 minutes, turning once half-way through.

I'm not sure how long these will last in the freezer. They've only been in there a few days so far. They tasted just fine, other than the batch that got fatally scorched.
