This creamy dish gets a flavor boost from sweet onions, garlic and parmesan cheese.
3 large sweet onions, chopped 2 garlic cloves, pressed 1 tsp salt 1 tbsp olive oil (or substitute) 1 – 16 oz. pkg Arborio rice 8 c chicken broth, warmed 1 c dry white wine (or sub 1 c chicken broth) ½ c shredded parmesan (use soy parm) 2 tbsp butter (use I Can’t Believe spray, probably not 2 tbsp)
Saute first 3 ingr in oil in dutch oven over med hi until tender
Add rice, cook stirring constantly 2 min. Reduce ht to med and add 1 c broth./
Cook, stirring often, until liquid is absorbed
Repeat procedure with remaining broth 1 c at a time (cooking time is about 30 min).
Add wine (or broth). Cook stirring gently until liquid absorbed. Stir in soy parm and butter spray. Serve immed.
