Carrots with Honey (perfect for Passover)

CARROTS WITH HONEY (from Southern Living 2002 Annual Recipes) (makes 4 serv)
Honey tends to evoke thoughts of a soothing accompaniment with breakfast foods such as oatmeal. This comforting ingredient, however, plays a grander role in many of the dishes served during the Jewish Holidays. They’re perfect for Passover, but you’ll enjoy them year-round.
1 lb carrots, diagonally sliced and peeled ¼ c OJ 1 tbsp lime juice 2 tsp butter/margarine or butter buds diluted in water ½ tsp salt 1/3 c honey 1 tsp minced fresh ginger ½ tsp grated orange rind ½ tsp grated lime rind
Cook first 5 ingr in 2 qt saucepan over med ht, stirring often, 20 min or til carrot is tender.
Remove from heat, stir in honey and remaining ingr.
