I modified this recipe from the Soy Dream website, and it's fantastic! You can even add a couple more ounces of tofu if you like your eggnog really creamy. This stuff makes running out of Silk Nog much less catastrophic.
Soy Dream Nog
1 quart soy or rice milk (vanilla or plain)
6 oz. Silken tofu, firm or extra firm
6 Tbsp. maple syrup
1 tsp. rum extract
2 tsp. vanilla (I used 1 tsp. with vanilla rice milk)
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground cloves
Combine all ingredients in a blender until smooth and frothy. Refrigerate before serving.
Makes 5 cups of Soy Dream Nog
