Hi Rose, I know the problem. My husband is on the Aitkins diet! He eats a LOT of MEAT! I, on the otherhand, am vegan. He cooks his own meat, usually a steak or chops of some kind and I eat my veggies. The one thing that both of us enjoy and is quick to prepare, the Gimme Lean sausage style soy meat. It's a fast food, I know, but quite nutritious. You can get it in most grocery stores. Fry it up in a little olive oil...serve with veggies and rice or put it between two pieces of sourdough bread and you've got a quick nutritious meal. Yves puts out a soy "neatball" which I throw into sweet and sour sauce or pasta sauce to give the meat-eaters the impression that there is meat in the dish. These meals can be made up withing half an hour. You can use prepared pasta sauce, fat free variety from the grocery store. By the way, these soy products are very low in fat. Happy eating...M-J.
