pork & scalloped potato casserole       11/28/05 07:42 PM Edit Reply Quote cazzer Reged: 11/28/05 Posts: 4 Loc: Canada INGREDIENTS: 2 tablespoons olive oil margarine 1 tablespoon olive oil 1/2 teaspoons salt 1/4 to 1/2 teaspoon ground black pepper 3 tablespoons all-purpose flour 2 cups chicken broth 3 pork chops 4 thinly sliced large new potatoes 1 dash paprika DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). In sauce pan melt margarine over medium heat. Add salt, pepper and flour**. Pour in the chicken broth, cook and stir until mixture boils. Remove from heat and set aside. In skillet brown pork chops in 1 tablespoon olive oil. Grease a cooking dish with Pam or olive oil and layer potatoes. Pour mixture over potatoes and place browned chops on top. Sprinkle paprika on top. Cover and bake for 1 hour. Uncover and bake for an additional 30 minutes. **I added chopped onion, cumin and garlic to the broth mixture for some extra zing!
