That's what I typically do. I heat up soy milk and thicken it with either cornstarch or a little flour - either way, whisk it in well when it's cold, or add it to a little bit of cold water and whisk it in that way.

Start with a good-tasting soy milk and be sure to season it well, and it should be fine.
