I think I've gotten this down to be IBS safe (for me). I use rice milk w/ this. All feedback is always welcome (good and bad!) Here’s the roll recipe. It’s great because you can mix it up and use different flours.
¾ c white rice flour ¼ c potato starch ½ c tapioca starch 2 t baking powder ½ t xantham gum ½ t salt ½ c milk 2 egg whites ¼ c apple sauce (type of your choosing) 2 T oil
Over at 400 degrees. Bake 10 mins and then flip rolls over and bake another 10. I use a ¼ c measuring cup to scoop out batter. Makes approx. 10 roles, depending on how much batter.
You can also mix it up a bit.
Use ½ c white rice flour and ¼ c buckwheat (or another). You will need to add more milk w/ buckwheat or others (usually need 1-1 ½ C total milk for other flour types).
Feel free to experiment. I just made some today and used amaranth and cinnamon. YUMMY!
