Perhaps use finely grated apple? (get out those funky food processor blades!)

Lemon juice prevents browning. I like Melissa's suggestion re: cooking in apple juice/cider. I'd personally use cranberry--I like the tart contrast.

Definitely spice it up, i.e. cinnamon, cloves, nutmeg. A little rice milk/cornstarch and it's got that creaminess.

Ooooh. How could I forget maple syrup? That would be amazing. Fresh ginger? Or candied ginger? Marshmellow fluff? (is that safe???) There is the raison option. Personally, I think raisons are disgusting. Maybe cranberries or dried cranberries?

Or skip the cranberries/dried cranberries and get that sweet tart gooeyness with canned cranberry sauce? Warped, I know.
Carob chunks? Dairy free hunks of chocolate? Nuts, if they're safe for you. Personally, I'd go melted marshmellows or marshmellow fluff and cranberry sauce.

Which, in turn would make me crave gummie bears.
