The weather finally got cool enough to be in the mood to cook again. So I've been on a cooking rampage. This week we've had Chicken Stuffed Shells I absolutely loved them. I added some spinach and some soy cheese to the mixture. This dinner's a keeper! Peking Chicken Burger I used turkey for these. I've tried to impress my boyfriend with a variety of turkey burger options over the past 5 years. This was the only one he ate and actually enjoyed. Finally!! Baked Chimichangas I loved how easy this was to throw together after a work day. My boyfriend is Columbian and was a little critical of the recipe, but was hungry enough to eat 3 of them.
