Sweet Potatoes with Red Curry Paste       10/19/05 02:44 PM Edit Reply Quote steather Reged: 01/29/03 Posts: 345 Loc: Phoenix, AZ I was looking for some Thai recipes to use my red curry paste with, and I came across this one on recipezaar...it sounds so yummy! Mashed sweet potatoes with red curry? What a killer combo! Sweet Potatoes with Red Curry Paste 4 servings 2 sweet potatoes, peeled and diced 1 tablespoon Thai red curry paste 2 cups chicken stock 4 tablespoons unsalted butter substitute (to taste) salt and pepper (to taste) Place potatoes in a saute pan, cover with chicken stock and swirl in the red curry paste. Cook covered until tender. Reserve liquid for another use like cooking rice.
