you eat a low fat meal around it. I make coconut rice sometimes. I use jasmine rice and mix lite coconut milk and water about half and half and twice as much as the rice. Simmer until tender or cook in a rice cooker. Never use all coconut milk. Also make sure it is lite. Kame brand is the lowest in fat- 3 grams per serving.

like this:
3/4c jasmine rice
3/4c lite coconut milk
3/4c water
simmer 20-25 minutes.
that will have a total of 9 grams of fat for the recipe (9-12 depending on brand)
