This is soooo yummy. I have to omit the red pepper flakes because it makes it too spicy for me.
Zippy Shrimp Linguine
1 pkg (16 oz) linguine 1 lb uncooked lg shrimp, peeled and deveined 2 garlic cloves, minced 1/2 to 1 tsp crushed red pepper flakes (if sensitive tummy - omit) 2 Tbsp olive oil 1 tsp butter 1-1/2 cups sliced zucchini 1 cup yellow summer squash 1 cup julienned carrots 1 cup fresh broccoli florets 1 Tbsp minced fresh parsley 3/4 tsp salt
Cook pasta according to package directions. meanwhile, in a large nonstick skillet, stir-fry shrimp, garlic and pepper flakes in oil and butter for 3-5 minutes or until shirmp turn pink. Remove shrimp; keep warm. Add the zucchini, summer squash, carrots and broccoli to same skillet; stir-fry for 8-10 minutes until crisp-tender. Return shrimp to skillet. Drain the pasta; add to skillet along with the parsley and salt. Heat through.
