1/3 cup applesauce 1 cup dark molasses 1 1/4 cup orange juice 1 Tbs. finely grated orange rind 2 1/2 cups all purpose flour 1 tsp. baking soda 1 tsp. cinnamon 2 tsp. ground ginger 1/2 tsp. salt 1/2 cup chopped raisins
Preheat over to 350 degrees F. In a large bowl, mix together wet ingredients. In a medium bowl, sift together dry ingredients. Add raisins. Add dry ingredients to wet ingredients and mix well. Pour into a nonstick 9-inch by 13-inch pan and bake 40 minutes, making sure not to over bake. Gingerbread will be moist.
