On the amount of wine, and your stability. Traditional thinking is that all the alcohol burns off, but of course you are left with the other potential triggers (tannins, I think, stuff like that). If you are just using a little bit in a sauce or something I'd say you'd be fine IBS-wise. But, I don't know anything about upper GI stuff so I'd talk to your doc about what to do about the Prevacid.
