easy blueberry pudding cake adapted for contest

8oz frozen blueberries
2t. cornstarch
1T. sugar
1/2 of a 18.25oz box yellow cake mix
1c. light vanilla soy milk
3 egg whites
3T. stick margarine, melted
1/2c. unsweetened applesauce
Butter flavor cooking spray

Preheat oven to 375. In a small saucepan over medium heat add blueberries, cornstarch and sugar. Heat to simmering, stirring occassionally. Simmer two minutes.
Meanwhile put cake mix in a medium bowl. Whisk in milk and egg whites, whisking until smooth. Add appplesauce to melted margarine and whisk the mixture into the cake batter. Pour cake batter into an 8 inch square baking pan sprayed with cooking spray. Drop blueberry mixture onto batter in spoonfuls. Bake for 30 minutes or until a wooden pick inserted in cake comes out clean.
Serves 8-10
