Pumpkin Angel Food Cake

Here is my first ever recipe posting. My mom says that this is awesome! Enjoy!

2/3 to 1 C. canned or cooked pumpkin
1/2 t. vanilla
1/2 t. ground cinnamon
1/2 t. nutmeg
1/4 t. cloves
1/8 t. ginger
1 pkg. (16 oz.) One step angel food cake mix or your own recipe
Optional for topping: Whipped topping and cinnamon

Method: Preheat oven to 350 degrees. Combine pumpkin, vanilla, cinnamon, cloves, nutmeg and ginger in a large mixing bowl. Get your cake ready according to the directions on the box. Take a 1/4 of the batter and fold into the pumpkin mixture. Then combine the rest of the batter by carefully folding into the pumpkin mixture. Transfer to an ungreased tube pan (10") or 2 loaf pans. Slice with a knife through the batter to remove air pockets.
Bake on the lowest rack of the oven for 38-44 minutes or until the top of the cake is golden brown. The cake should also spring back when lightly touched. Take a knife and go around the sides of the pan so you will be able to remove it onto a serving plate. Very quickly turn the pan onto a wire rack. Cool completely for about 1 hour. Serve with whipped topping and cinnamon. Yields 14-16 slices.
