Savory Mushroom Omelette filling notes

I've been playing with my food processor and 'shrooms, I confess. I made a DIVINE portabella omelette, this morning.

Here's what I did prior to the usual omelette/frittata procedure:

I put the 'shrooms, etc. in the food processor. It was this divine 'paste.' Honestly, I THOUGHT IT WAS MEAT!!! I thought I was going to have a 'cow,' a la Bart Simpson. I tossed in fresh basil as I had it, a tiny quantity of red onion...and well...OMIGOD! All I added dried herb-wise was
herbs de provence.

Just thought I'd share. Very quick. TONS OF SF. TOTALLY IBS-safe. Really satisfying. I thought I was eating at a french restaurant.

All it needed, for my next 'shroom frittata fix would be a contrasting colour/flavour. Either spinach or asparagus would work perfectly.
