From Mott's Applesauce Cookbook:


2 c graham cracker crumbs
1-3/4 c all purpose flour
1/3 c firmly packed lt brown sugar
1 tbsp baking powder
1/2 tsp salt
2 ripe med bananas, mashed (1 c)
1-1/4 c FF soy milk
1/2 c applesauce
1 egg sub or 2 egg whites
1/2 tsp vanilla
1/2 c chopped pecans (opt)

1. preheat oven to 400.

2. Line 16 muffin cups w/paper lines or spray with cooking spray

3. in lg bowl, combine graham crumbs, flour, brown sugar, baking powder and salt

4. In med bowl, whisk together bananas, milk, applesauce, egg and vanilla

5. stir applesauce mixture into flour mixture just until moist. Fold in pecans if desired

6. spoon evenly into prepared muffin cups

7. bake 20-25 min or until tester inserted in center comes out clean.

8. Immediately remove from pan, cool on wire rack. serve warm of completely cool.
