Trish - The recipe that I talked about a few days ago didn't turn out that great. It tasted good but the little birds I made turned out fat, flat and needed WW! Anyway, here's the one from Electric Bread:
PORTUGUESE SWEET BREAD Cal 216 chol 36 mg sod 333 mg protein 12% Carb 62% fat 26% (They don't say how many servings are in a loaf--duuuhhhh!)
Notes: this recipe produces a souply-looking dough. As kneading progresses, the potato flakes will absorb the moisture.
Put crust setting on light. Use rapid or regular cycles
For Large Loaf: 3/4 c lukewarm water 3 c white bread flour 1-1/2 tbsp dry milk (use dry soy milk if possible) 1/3 cup sugar 1-1/2 tsp salt 3 tbsp butter 1/3 c beaten egg (or egg beaters) 3/4 tsp lemon zest fresh 1 tsp vanilla extract pure 1/3 c dried potato flakes 3 tbsp pineapple juice concentrate thawed 1 tsp fast rise yeast OR 1-1/2 tsp active dry yeast
Trish - let me know how it comes out. I've had the real thing made with real hands (no bread machines for her) from one of my husband's sisters (they're all Portuguese) and she makes the best, moist, tasty sweet bread. The longer it sits, the moister it gets.
