Sub rice products for soy for a lot of things in these recipes: rice milk, rice cheese, rice cream cheese, even rice sour cream and rice butter exist, I've been able to find all of them at Whole Foods, a health food store chain.
They make a non-soy meat sub called Quorn, I've also found it at Whole Foods. The company does make beef subs.
The wheat allergy I can't help with much, but I can't have soy and I'm a vegetarian as well. Stir frys with rice and pasta with sauce are my staples. Risottos also are tasty and filling, and a good way to incorporate veggies.
Hope that helps.
