The best roast recipe ... except only without the roast

I used to make this all the time. It made even a cheap pork roast taste fabulous. But, obviously, I can't eat roasts anymore! So this weekend I tried using this with chicken breasts. This recipe is for 3-4 lbs meat. Adjust accordingly.

In the crockpot, toss in the meat. Pour/throw over it

3/4 C soy sauce
1/4 C white vinegar
1 t garlic powder
1-2 bay leaves (I use 3)

Add water until the meat is submerged. Cook on low for several hours.

It was OK the first day. When I put the leftovers away, I poured some of the juices in the tupperware so that the chicken was completely immersed. It was really good the second day. So, next time I'm wondering if maybe I should let it soak in the mixture overnight?

The juices make really good gravy if you're into that. I make cruddy gravy because I've never really liked it, so sometimes I just pour some of the juice on top of mashed potatoes and mix it in. Sounds gross, but it's good.
