These are a great change from the usual turkey sandwich! I just estimate the amounts.
4 flour tortillas (6-inch) 4 ounces drained soy yogurt (or soy cream cheese, but I use the yogurt to be healthier) 1/3 cup peach preserves cheddar soy cheese, shredded 1/2 cup packed washed fresh spinach leaves 3 ounces thinly sliced turkey breast
Spread each tortilla evenly with 1 ounce of drained soy yogurt. Cover with thin layer of preserves and sprinkle with cheddar soy cheese. Arrange spinach leaves and turkey over cheddar cheese. Roll up tortillas. Cut crosswise in half or into 1 inch pieces (I skip this and eat it whole). Wrap in plastic wrap and refrigerate (or if you're like me and can't wait, eat immediately!).
