my mom used to make this for me when i was a kid. it was one of my favorites, i ate it for breakfast or a snack. she used lots of oil because oil makes everything taste better, but i of course have to use little oil...so easy to make!
2c flour 3/4c chopped scallions (or to taste) salt to taste (optional) water
1. in a large bowl, mix flour with scallions and salt. 2. slowly pour in water while mixing until batter reaches the consistency of chocolate syrup (should not be too thick.) 3. heat a small amount of oil in a nonstick skillet (or use cooking spray) and pour batter onto heated skillet. spread the batter very thinly with a spatula (the thinner the better, i think!) 4. when the bottom gets crisp and slightly browned, flip over and do the same to the other side. 5. serve immediately as is or roll it up like a crepe.
