I made the cornbread in Heather's cookbook. It was great! I added just a little cumin and cajun seasoning. I made it with chicken pieces with ginger/jalapeno BBQ sauce that I grilled and some coleslaw. I cooked the cornbread in a cast iron pan. The amazing part was DH was making yummy noises all through dinner and I thought he wouldn't be very impressed with it!
