Oatmeal scotchie bars

Preheat oven to 350.

Spray jelly roll pan with non-stick cooking spray and set aside.

Make a DOUBLE batch of fat-free oatmeal raisin cookies -- but DO NOT put in the raisins, and QUADRUPLE the cinnamon instead of doubling it (to 2 t). Note also that light corn syrup has HFCS -- I used Karo dark instead.

Once you have the gluey-looking oatmeal batter, add 1 C of dairy-free butterscotch chips. (Note -- I think Nestle butterscotch chips have dairy. I buy a generic kind that's safe except for the gobs-of-fat factor.)

Once these are mixed in, press the batter into the pan. Bake 15-20 minutes or until done. They should be brown around the edges and maybe a tiny bit sickly-white in the very middle. Don't overbake!!!

These are best served warm, but it is certainly possible to eat half the pan when they're cold, too.
