Irritable Bowel Syndrome Message Boards | Hi, I'm a newbie to this board

Hello, my name is Stephanie and I'm a newbie to this board. I've always loved to cook and bake so I hope to be able to put up some exciting recipes once I get the hang of the substitution and modification use.

It's my husband who is the IBS sufferer and I empathize with him and understand how painful it can be. I finally got fed up with him being in pain so much that I started researching IBS for him and was able to get him to get inspired to look up on it as well. I have to say out of all the research out there, Heather's makes the most sense. It helps break it down for IBS sufferers and non-IBS sufferers. I've read the whole book and have already cooked numerous recipes and loved all of them as well as my husband. The best thing is that he's not in pain any more and doesn't feel deprived with the new eating outlook. His birthday was this past weekend and we made "Better than cheesecake" for his cake and he LOVED it; I surprised our relatives by after letting them know that it was actually tofu that made the cake... they were shocked but couldn't say it didn't taste good!

Well, we are having a baby this Dec 26th and I'm wanting to prepare some foods ahead of time so that I'll have less to cook for those first 3-4 weeks. I don't want my husband's attacks to come back putting him into pain on top of having us to deal with a newborn. I'm already planning on makes batches and batches of all sorts of the breads but has anyone frozen any of the main dish entrees and had them taste defrosted? Any ideas for me? Any would be greatly appreciated.
