Do a search on the Food Network website. I know Rachel Rae did a whole thing on easy picnic food (and all of her stuff is 30 min meals). One thing she did was skewer a bunch of chopped fruit together like a shishkabob, put it in a tupperware, covered it in a citrus marinade, and closed it up. You could easily do the fruit on Thursday night but keep the marinade separate, and then combine the two right before your road trip. Anyway, search Rachel Rae (not positive that's how she spells her name), because her 30 min meals are yummy and quick. Also, that Barefoot Italian lady (I'll attempt her name -- Giada de something?) has done a lot of easy beach picnic things. Good luck!
