If you get the smaller boxes with almost no water, a tight ziplock bag should last it a couple of days. If you drain your tofu of water and freeze it, it takes on a bread like texture. If you really dry it out (like with paper towels or something) and then freeze it, it takes on a mock-chicken like texture. Try it out in stir fries and more!
