Glad you enjoyed the salad Passanie! Yeah, 4 cups feeds a small army, so cutting it down is definitely recommended!! Which type of barley did you use? I know the pearl barley will be less chewy than the hulled barley, and it takes less time to cook. I think the texture will depend on how long you cook it...when I made this, it was pretty tender...the barley got all fluffed up, and was a little moist (I was afraid I had used too much water, but it ended up being fine). I had made two batches, and one batch was definitely a lot "fluffier" than the other. The fluffier batch was almost all white and translucent, while the chewier batch still had a little golden brown tint...thought it was still good, just with a pleasant chewiness. I probably could have added some more water and cooked it a little longer to get it as tender as the first batch...
