Microwave risotto. I live on this stuff!

This makes an appearance a few times a month, often when we have guests around. Very easy, and really adaptable. We have made versions of this with thai red & green curry. You can also stir through a pasta sauce to give it a kick. It can be vegan, vego or have meat in it. I stick to vegan, but it works well all three ways.
1 onion, peeled and diced 2 tablespoons olive oil 1 cup aborio rice 2 cups stock * 1.5 cups assorted vegies ** 1/4 cup toasted pine nuts
1. Place onion & oil in a 2 litre casserole dish. Cook uncovered for 2-3 mins on high, stir, cook for another 2-3 mins.
2. Stir in rice and mix well until rice is covered with oil. Add stock and vegies. (If you are planning on using meat, add this here too - in small pieces so it will cook too). Cover & cook for 12-15 mins on high. Do not stir.
