This week I made White sauce and wild mushroom pasta bake . I liked it and my DH really, really liked it, so definitely a success.
Cook's Notes: I used rice milk instead of soy milk. I used 1 pound of sliced white mushrooms instead of wild mushrooms. I baked for 25 minutes at 350 degrees. I used 1 cup of uncooked elbow macaroni; it made about 2-3 cups cooked. I did use the tomato. When I made the white sauce, I seasoned it as recommended in one of my cookbooks: 1/4 tsp salt, 1/8 tsp pepper, dash of paprika, 2 Tbsp sherry. When I make it again, I'll stick with the salt, pepper, and paprika - maybe even increase the salt a little - but try a more definite additional seasoning, like basil. Alternatively, a chicken bouillon cube might add nice flavor.
