Chocolate Frosting

It's been over 3 months since I made this so I don't remember the specific changes I made to the recipe . I'll post the recipe as is and tell you what I think I did lol. I'm pretty sure I cut down on the soy butter. I figured I could add it if I needed it. I'll try (notice I said try lol) and then I can post any changes. If anyone else tries it please post how it turns out.

6 tablespoons soy butter (I believe I only used 4 tablespoons)
2-2/3 cups confectioners' sugar
1/4 baking cocoa
2 tablespoons soy or rice milk
2 tablespoons water (it called for strong coffee so maybe you can add decaf instant coffee. I don't like coffee so I just used water)
1 teaspoon vanilla extract

In a mixing bowl cream butter, sugar, and cocoa. Gradually add the milk, water (or coffee), and vanilla, beating well. I made cupcakes from Heather's Peppermint fudge cake and sent them to school with Madeline for her birthday. It did seem to hold up better in the fridge. I can tell you there was leftover frosting and I was eating right out of the bowl. It was so good.
