I make muffins all the time, but I'm the only one eating them, so I let them cool, through them in a gallon size ziploc bag, and put them in the freezer. I pull one out when I pack my lunch for work, and it's thawed by lunch time. Or if I'm at home, I put it on a paper towel and heat it for about a minute.
