Honestly, I just make egg salad like I'd make it with whole eggs, but just use the whites. Hard-boil the eggs, cut in half, discard the yolks, chop the whites. Mix with light mayo, a squirt of mustard, salt, pepper, and onion powder. If you can do raw celery, a little of that minced is good. The little bit of mustard is what really seems to make it, though.
