I'm hopeless on amounts, but as far as ingredients go, I've got a bottle of The Spice Hunter Fajita Seasoning (Salt Free). It says "Create spicy marinades, spreads, dips, and sprinkle on chicken or beef." The ingredients are: onion, garlic, ginger, paprika, jalapeno pepper, oregano, mustard, cumin, red pepper, parsley.
I haven't tried this mix yet myself, but the ingredients look really interesting. I would never have thought of either ginger or oregano in fajitas (although I put oregano in my chili).
You could also do a Google search on "fajita recipe" and see what turns up. I think there are recipes for everything somewhere on the Web.
