Baba Ganoush recipe

Here's an easy recipe for BABA GANOUSH (eggplant dip):

1 medium to large eggplant
1/4 cup lemon juice
1/4 cup tahini
2 T. sesame seeds
2-3 cloves garlic, minced
salt and pepper to taste
1 1/2 T. olive oil

Preheat oven to 400. Grease a baking pan. Pierce eggplant several times with a fork. Put in pan and roast for 30-40 minutes, turning occasionally, until it's soft and deflated.
Remove from oven and place in a large bowl of cold water. Remove from water and peel the skin off.
Place eggplant, lemon juice, tahini, sesame seeds, and garlic in a blender or food processor and puree.
Season with salt and pepper.
Transfer to a medium-sized bowl.
Slowly mix in the olive oil.
Refrigerator 3 hours and serve with pita bread wedges. (I saw the same recipe without the sesame seeds so I guess that is optional.)
