Roasted Red Potatoes with Zucchini and Basil

5 small red potatoes cooking spray 1 yellow bell pepper 1 Tbsp oilve oil 1 Tbsp lemon juice 1/2 tsp fresh ground pepper 2 cloves garlic, minced 3 small zucchini's 1/4 cup fresh basil leaves, coarse chopped
Preheat oven to 375. Scrub potatoes and slice into wedges. Place in a 9x13 dish sprayed. Coarsely chop yellow pepper and place in dish. In a small bowl, whisk together olive oil, lemon juice, and garlic. Pour over potatoes and peppers; toss well. Bake 30 min. Slice zucchini into thick circles. Add to dish, tossing to loosen and distribute ingredients. Bake for another 20 minutes. remove from oven add basil and toss again. Cook till potatoes are crisp - tender about 10 more minutes. serves 6
