baked potato poppers-variation

Hey all. I made the Tasty Potato Poppers from the Recipe Index, and didn't find it to my taste, but I made a variation. Feel free to use, let me know if you have questions. Theresa
Ingredients:
2 Medium large potatoes, skinned and mashed (just this, nothing added to it like milk, butter, etc.)
1/2 a medium sized onion, minced very small
2 celery stalks, minced very small
1-3 TBSP Soy butter (you can add as little or as much if you want, but I would go ABSOLUTELY no higher than 3. PS. I dig Earth Balance soy butter)
4 strips of cooked turkey bacon, minced (I definitely like Butterball the best)
1/2 cup of soy cheese (I did a cheddar/mozarella combo)
Combine the potatoes celery, onion, bacon and soy cheese in a bowl. Determine how much butter you need to add after checking the consistency (It needs to be able to be rolled into balls without falling apart).
Roll into 3/4 inch balls, and place on a baking sheet lined with parchment paper, or sprayed with canola cooking spray. Bake for about 25 minutes at 375, or until crispy. Make sure you bake until they're crispy/slightly browned, or they won't be as good. Makes about 20.
