But I made the most delicious baked cheesecake style cake using.......... wait for it........ pureed chickpeas!! It was a rum and raisin cake and it was DELICIOUS!!? I used a tin of chickpeas pureed with a cup of SR flour, added some sugar and some eggs, and some rum soaked raisins, and it came out soooooooo moist that I can't get enough of it!! It doesn't taste at all of chickpeas, the peas seem to have just provided the cake with a really moist baked cheesecake style texture. Who'd have thought!!!? If anyone is game to give it a try I can post the whole recipe. If you'd told me a year ago I'd be making a cake with pureed chickpeas I would've told you you were crazy!! Of course I wouldn't tell anyone off the boards I made a cake with chickpeas...... I think I'd get locked up!
